Product Introduction
β - Amylase (EC 3.2.1.2) is an exonuclease that, when acting on starch, can hydrolyze α - The non reducing end of a 1,4-glycosidic bond sequentially cleaves a maltose unit to produce maltose and macromolecules α - Boundary dextrin. Due to the Walden inversion reaction that occurs when the enzyme acts on the substrate, the product is transformed from α- Type change to β- Type maltose.
Application area
Mainly used in the sugar industry for beer, high maltose syrup, crystalline maltose, and other starch based raw materials using maltose as a product or intermediate.

Instructions for use
★ Maltose production: After obtaining a liquefied liquid with a DE value of 12-16 during the liquefaction stage, the enzyme dosage is added at a rate of 1.0-1.5kg/t (dry matter) under conditions of 50-55 ° C, pH 5.0-5.5, and saccharification is carried out for 20-30 hours to obtain maltose products with a DE value above 55. (It is also possible to adjust the amount of enzyme added and the saccharification time according to the actual production situation, and add pullulanase MAX P-1000 to obtain high maltose syrup and ultra-high maltose syrup.)
★ Beer production: Enzyme dosage is added at a rate of 2.5-3.0kg/t (dry matter), barley malt and auxiliary materials are added at a rate of 6:4 or 5:5, enzyme and water are added at a rate of 1:5, soaked in 50 ° C warm water for 30 minutes, and added at once, stirred evenly, and saccharified. (Enzyme addition can be adjusted based on the quality level of barley malt)
Storage&Stability
Store at low temperature and avoid direct sunlight. Under storage conditions of 4-10 ° C, the shelf life shall not be less than 12 months.
